How can I see messages from blocked numbers
I would like to know if there is a way I can still see the messages from a blocked number without unblocking the number.

No. If you blocked the number the messages aren’t delivered to you. Like the info in the article from the top of the page states (Block phone numbers, contacts, and emails on your iPhone or iPad - Apple Support ) text messages sent and received are not delivered.
