How to get STEREO audio input into a Mac Mini 2023 M2?

Since there is no stereo/microphone input jack on the new M2s, what is the easiest way and/or product that will allow me to replicate a true stereo input into my M2 and Audacity Titanium 20 software so I can continue to burn my old vinyl onto CDs or a SSHD via a USB outlet?

I tried an older Sound Blaster Play 3 dongle, but it only picks up one channel from the stereo recording. I'd hate to have to switch cables and power between my M2 and the older Mac just to continue using the actual microphone input jack.

For audio quality, I suggest looking at these:

Focusrite Scarlett 2i2

Presonus Studio 24c

Or similar device with 2 inputs (stereo)

In my own case, I purchased a Mackie ProFXv3 mixer with a USB interface; the 6-input & 10-input models are at a price point that's very competitive with the dedicated 2-input interfaces.; and there's a lot more functionality.
