Looking up specifics in text messages
How do I search for specific dates inside text messages that I have saved

You cannot search for a text messages that was sent on a specific date. You can search for a particular date if that date (including the right format) was a part of a text message.
To search a text string in the Messages app, open Messages app ➡️ Touch & Pull down from the middle of the screen ➡️ This will reveal the Search Bar at the top: Here, you can enter the Search string to find the text.
