So say for example I’m watching youtube or am listening to music with the same device I’m calling with, the audio of the YT video or the music seems to quiet down whenever the person I’m calling with talks. Where do I turn this off?

That is actually normal iPhone behavior. You are not going to be able to turn that off. What you can do is stop playing the media so that you can hear the person who is talking OR disconnect from the call.
