I have a bunch of old chargers for the MacBook Pro and these are 61w. Can I safely use these to charge my MacBook Pro? Can I also Use these safely On a MacBook Pro M1 Pro or M1 Max?.

You can use the old charger yes.
The rule of thumb—if you are near the mains leave it plugged in, if you need the portability then run on the battery only—this is how you help optimize your battery charging and extend the working life of your battery by reducing the cycle count.
if that older charger is a MagSafe-only, it will not FIT on the newer Macs MagSafe-3, and there are no adapters because the negotiating protocol changed.
The M3 Macbook Pro comes with a 140w USB-C charger (16-in), or a 70 W USB-C charger (14 in). Both also ships with a 2m USB-C to MagSafe 3 cable. That should be all you need to meet your charging needs unless you believe spares are needed to be kept at work and home.
so that I do not have to buy new chargers if I already have capable chargers.
I want to have a charger with me next to the one that I will get with one of these Macs.
I have a few of them laying around and if I can use them if would be great to have a charger at home, at my studio and one in my laptop bag and not have to constantly take the one I get with the Mac with me.
aha, no, its okay. These are USB-C. I can also buy a usb to magsafe cable.
