I have my watch series 8 synced with Iphone 13 and I am not able to set any passcode on the watch. The passcode is greyed out. However, during the initial setup I entered the passcode and enable the same but then post setup its greyed out. I have switched off the screen time, wrist detection and what not still not working also tried resetting.

Try turning off passcode then turn it back on
from your iPhone>Watch>Passcode>Turn Passcode Off
The back close down the app, reboot your watch then reverse it.
When you turn off the passcode, you will most likely loose any credit/debit cards you have in your wallet and it will turn off Apple pay on your watch. You will need to add it all back if you use it.
