Have you verified whether or not you are using the Epson driver vs. Airprint; and if it's the Epson driver, is it the most recent p9000 driver for Ventura?
Regarding Airprint, it does not support all the functions of native printer drivers; and I have seen (experienced) macOS converting a printer to Airprint without any user action (usually naming it something like "Printer xxxx-2," the 2 being the difference in printer names). Check this in Settings. I saw this happen right in front of me; I was able to fix it by removing the printers and then adding them back, making sure to select the Epson driver and decline Airprint.

Also, when you say this happens when printing via Photoshop or Preview, it suggests the problem is with those apps, not the system. It is possible they are pointing to an Airprint version of the printer; check that. What reason do you think the problem has something to do with the size of the images you are trying to print? Do PS & Preview print small images ok but big images not ok?
Finally, if you have a USB hub between the printer & Mac, remove it and connect the printer directly to your Mac; and make sure you are using a high quality USB cable that is no more than 10' long.
