Apple Watch fitness app recording workout

My watch used to prompt me after a brief time of inactivity to either end workout or dismiss.....now several times I've come home from my walk or run and forgotten to end the workout and 4 hours later of total inactivity, including removing watch, it is still recording a workout.

Why isn't it prompting anymore?

How can I prevent Apple Watch from suggesting activities? Sometimes when I touch an activity (say, Outdoor Walk) on my watch, instead of just doing the 3-2-1 countdown and starting the workout, it gives me an unwanted screen, and I have to touch “Suggestion” before the workout starts recording. Apple Watch workout quits automatically when paused Stop an Activity on Watch workout from quitting during a pause. I go on long walks and occasionally stop to talk to a neighbor. It used to be that if I stopped, I would be nagged by the Watch, am I done walking. If I ignored it, it kept the Activity walk running. Now, if I ignore the nag, it quits the activity. That is new. How do I turn that off? And I understand there is an auto pause, which would be nice.

Apple watch always goes to outdoor walk in workout. I have a 1st generation Apple Watch Ultra and recently it starts recording outdoor walk automatically. If I bump the workout button it automatically goes to outdoor walk. I have to end the exercise and go to say outdoor cycle or what ever. It didn't used to do this. If I touched the workout button I could choose what workout I wanted. That is no longer the case. Is there some setting that I have accidentally triggered?
