Going through the iPad storage I noticed “suggestions” tap on it and saw “delete old conversations” by mistake I tap on it, and immediately try to untap, with no luck. Why Apple? Why?

Depending on the iOS version and misc details the message might be
restored by use of 'recover deleted message' option, where they exist.
"In iOS 16, iPadOS 16.1, or later, you can recover conversations
and messages you deleted in the Messages app."

This may (or may not) be an option in your specific situation.
