I use two different computers w/ the same version of FCP (10.7.1) but the audio inspector options are different on each machine - and I can't figure out how to change the settings to provide my preferred options (like voice isolation, loudness, noise and hum removal).

You have to analyze the clips first. Click the magic wand icon, it'll run the analysis, and you'll be good to go.
There are Show and Hide buttons, but you have to mouse over them before they become visible. They obviously show and hide sections of the adjustments.
Please post screenshots of what you’re seeing. You probably have to move out toggle something to show what you want.

You can adjust the height of the inspector with control+⌘4.
