MacBook Air startup screen now has a baseball ⚾️ logo for some unknown reason ~ how do I change that please?

I remember years ago having chosen my own design from a drop-down menu. Is that still possible with the newer operating system?

I’ve seen other people have the same question, but I haven’t found the answer yet ~
