When using Quick Time Player, how can I pause the recording, then restart it a few minutes later? I saw instructions online saying to use Cmd+Ctl+Esc to pause, but when I tried it, the recording stopped and saved the file instead of pausing.

sorry, but the ability to pause a recording was removed a few versions ago. you either need to stop the recording and then restart it, or edit portions out of a continuously recorded video.
and, no, I have no idea why that was changed. only apple can answer "why" questions.
