How can I tell if my Apple ID has been compromised?

I went to the Vintage Faire Mall Apple Store in Modesto California to activate my new replacement iPhone and to deactivate my old iPhone and Apple ID. I did not ever think in my wildest dreams that this could happen but I was followed by my stalker/hacker and was unaware that she was there prior to my arrival. When it came time to activate my device my carrier (AT&T) screwed up and activated the eSIM in stead of my physical sim. I then saw my stalker walk out passing in front of me. Both devices were then offline and I did not get service until almost 24 hrs later the next day. When I finally got into my new device all of the settings had been activated and turned on. Two factor is on but does not come to my device. I am having trouble getting help for this issue as the only remedy to from the store is to erase the iPhone and start again. I would be ok with that however I have been going thru this for 2 years it didn't work on the last two iPhones and I don't want to waste my time with this one. I want to speak to someone that can help resolve this issue without me having to go to extremes to get it resolved. Does anyone have any ideas who or what department I need to speak to?
