iPhone 11 stuck updating for 2 days even after forcing restart

I wanted to update my iPhone 11 to iOS 17.4.1 so I connected it to my Mac to update through finder since I barely had enough memory on my iPhone. The first time it got stuck i connected it to Mac and put it in recovery mode with two options update or restore and I chose update. So in finder the update shows it’s complete and it recognizes my iPhone once it connect it. It also shows the option to sync iPhone and Mac by clicking trust but my iPhone has been stuck on that update progress bar for 2 days now.

I’ve forced a restart for maybe 10 times now and it’s the same result the update bar progresses till the last dot and then stops. I’ve tried leaving it off the charger so it runs of charge and shuts down but it’s been a whole night and it hasn’t run out and is still stuck in the update progress bar.

I’ve made the biggest mistake of not backing up and I have so much stuff I’d be heartbroken to lose. Does anyone have any way to resolve this?
