I am in the process of setting up and transferring everything to my new phone after 20 minutes of it trying to update. I turned it off because it was taken forever and when I turned it back on, it is now stuck on reconnecting and the only way to get out of that reconnecting is to reset and erase everything if I do that will it transfer back to my old phone or does it completely erase all the data it did transfer

None of the data on your old phone will be touched regardless of what you do with the new phone. If you need to start over, erase it and set it up again. I don't know how you're moving the data over to the new phone, but Quick Start works really well as long as you have a good Wifi connection.
