Software update got stuck on newly bought iPad on preparing update? What to do now?

If the update process has stalled for an extended period - and is now unresponsive - you'll have no alternative other than to force-restart the iPad.
Connect your iPad to its Power Adapter and allow the iPad to charge. While the iPad remains connected to the Power Adapter, perform the restart:
Force restart iPad (models with Face ID or with Touch ID in the top button)
If your iPad doesn’t have the Home button, do the following:
Force restart iPad (models with the Home button)
Press and hold the top button and the Home button at the same time. When the Apple logo appears, release both buttons.
After restart, you can repeat the update process. Keep the iPad connected to external power throughout the update process - as this will keep the WiFi connection active.
