Remove Desktop from iCloud on macOS Sonoma

Hi,

I'm having sync issues that have become unmanageable because my files keep getting offloaded even when there is space available, and become unavailable when I need them.

I want my Desktop not to be synced with iCloud anymore. I looked online to find a simple solution but it seems to have changed since the last time someone asked a similar question.

How can I decide which folders I want to be synced with iCloud, and how do I deactivate this for specific folders only?
