I can't speak to your DJ software (you did not mention which software that is). However I will provide some anecdotal experience, and some statistics.
I have been utilizing three MacBook Pros that are identical to your model. One is used for a small business, one for my job in a large facility focused on engineering for space exploration, and one is my personal unit at home. All three are on Sonoma and run excellently. I also have a MacBook Air 2013 laptop that runs Big Sur, as that is the latest MacOS it can run. It is also excellent, but I can see flaws (bugs) in that older MacOS that have been addressed in subsequent version of the MacOS, including Sonoma.
But that is my anecdotal experience only. Now some "statistics." Where I work, we have thousands of Macs, most MacBook Pro laptops, and there are hundreds of the model you have (or ones similar to it). Those are now being "replenished," which means the employer requires that they be replaced with the newest models. So mine was just replaced last week with a M3 MacBook Pro, also running Sonoma. It runs much the same, but is faster than the older Intel unit.
My daughter's 2019 MacBook Pro (same as your model) is used for image processing, using Adobe Photoshop (including the new AI version) and Lightroom. She simultaneously has multiple web browsers running and multiple applications from the Microsoft Office 365 suite. This pushes that laptop quite hard, harder than the spacecraft engineering we do where I work, but these computers are quite robust and still very competitive. According to Micromat's Lifespan, my home unit has more than 99% of its SSD life remaining. The battery is down to about 90%. According to DriveDX, all its SMART parameters are scoring very high.
I would encourage you to investigate the compatibility of your DJ software with Sonoma. If it is compatible, I recommend that you make two verified quality backups of your entire system (Time Machine is good for this, as are various third party softwares for "clone" type backups), boot once into Safe Mode, make sure you have completely uninstalled all anti-virus and "cleaner" type software and third party security suites, and then shut down, boot up, and update to Sonoma. The MacOS is much more stable than it used to be because it keeps the MacOS inside a sealed, read-only volume/snapshot, which cannot even be modified by the owner, any user, and anything except for a certified and verified Apple Installer. This means no one can modify it except for Apple, and also that your user files are kept physically separate, which prevents MacOS issues from impacting user data and vice versa.
You can stay with Bug Sur but eventually you will likely run into compatibility problems with your software. For instance, on my Big Sur laptop, I cannot update to the latest version of Microsoft Office 365 or the Adobe programs.
