Your data would be where you backed it up. If you did that in iCloud, you could restore your new device to that backup. You cannot access individual data from a backup without installing it on a different device. Some data can be recovered from iCloud if you save it there, such as photos, contacts, notes, etc. It would depend on what you are trying to get.
