I bought M3 MacBook Air 1 week ago and from day one it restarts randomly and then says "restarted because of an error", the error says "panic".
I tried everything from google search and reddit, but nothing works, I can't do my work properly because it restarts several times a day.
Any ideas why?

If this Mac is only a week old, I'd bring it in to the Apple Store and have the techs take a look at it. You mentioned you get kernel panics once in a while, and those can often be caused by a hardware failure. The techs can run diagnostics to check the hardware.
