My dad and I have separate iCloud accounts but are under family sharing and I have recently noticed that when I change my photo on the 'my card' thing it also changes my dad's contact to this image. It then looks as if we are texting each other (on my phone). I have checked that 'my card' is selected correctly in contacts but nothing has changed!

Are you sure you have separate Apple IDs? This situation sounds exactly like what happens if two people/devices share the same Apple ID (but with different numbers). Open Settings and click your name at the top, then check the email right below your name. Is it the same email as the one displayed in the same place on your dad's phone?
