What do different colors mean on the map after I complete an outdoor walk or run?

After completing a walk or run, when I look at the map details on my phone, there are different colors from green to yellow and red. I'm sure these are important measurements, but I can't find out what they actually mean.

Workout map route colors explanations:

Yellow is the average pace.

Green is the fastest pace.

Red and orange are the slowest paces.

All sections are based on averages for that section and length of time to complete.

If there are grey dots on the route this is a weak or non existent GPS signal. The dots are where the watch is filling in the gaps.

I have some maps that are almost entirely yellow, one that is almost entirely red when I used it while walking a golf course, but most are mostly yellow and a little green thrown in which makes sense if yellow is the average but the red throughout on the golf course is strange?

I wish the golf app would download to a map because when I use the walking app on a golf course, it keep checking to see if I am still walking every time I stop waiting on my next shot.
