If I subscribe any plan for icloud storage purchase and if I stop renewing the plan, what will happen to the documents already in the phone?
Will the documents be deleted from icloud but still remain in my phone or will all the pictures and other stuff be permanently deleted from my phone?

Nothing. Locally stored documents are not affected by iCloud.

Anything synced to iCloud that exceeds 5GB will be deleted from iCloud when you cancel the iCloud+ upgrade, but will not be removed from the iPhone.
