It is not officially "recommended" as such but it is perfectly fine and safe to use Anker 20-watt adapters for charging iPhone Pro max.

Getting a New Apple Charging Brick:
Though not required, going Apple-for-Apple has always ben the best route for me. As for the Battery Health, unfortunately, there is no way to determine why, nor when, the Battery Heat decreased. In fact, it has been known to increase on times. As for the wattage --get one that suits your minimum requirements in wattage. If you don't then you won't get as fast of a charge. If you get a faster wattage then required, then you will not increase the charing spectrum.
