Finder shows ONE backup ONLY. Why?

Finder, under the General tab, Manage Backups... drop down window, ALWAYS shows ONE (iPhone) backup only.

I do NOT backup my iPhone using iCloud. I backup by connecting a USB cable, via iTunes/Finder.

I can perform two manual backups using Finder, one after the other, but ONLY the latest backup is ever shown in Manage Backups...

But that is NOT what this says: Locate backups of your iPhone, iPad and iPod touch – Apple Support (UK)

This is expected behavior. The new backup overwrites the old one. If you want to keep older backups, right-click the latest backup and click Archive. This will create an archived backup that won’t be overwritten.
