Are you saying that a different Apple ID shows on your iPhone in Settings than was there before the update? Whose Apple ID is it? iPhones can't change Apple IDs by themselves. Someone has to explicitly sign out of one with a passcode and sign into a new one, again with a passcode.

To Understand this you say after the update your iPhone changes itself your Apple 🆔 ? That is impossible none iOS updates log out the Apple 🆔 then log in with other Apple 🆔 , if you change your Apple 🆔 for another one of course you won’t see your notes because the notes are saved under your previous Apple 🆔 it will not stays or transfers itself to another Apple 🆔
