How to enable my Apple Watch to track my sleep?

I don’t need a sleep score but I would like the watch to be able to actually count when you go to sleep and when you when you wake up versus depending on an alarm set. If I fall asleep at 8:30, but my sleep is set for 10:30-6:00 that’s two hours of sleep that’s not tracked. Seems wrong to me versus other systems.

I used the automatic setup of the app, the Apple Health app registers only the time asleep and some other things.

A couple of weeks I had to disable the Apple Sleep app, since it stopped to count deep sleep, which AutoSleep still did.

After AutoSleep and Apple Sleep synced, the measurements for deep sleep phases were completely changed by the Apple Sleep app, and also overwritten in AutoSleep.

So I deleted the Sleep plan in Apple Sleep, no issues after that and everything is back to normal.
