How do I recover all my info since Apple changed itunes. I am running Windows 11.0

Apple did not change iTunes. iTunes is still the same and works the same way.

If you downloaded the Apple Music App for Windows, that is not iTunes, and you would then need to download the Devices App to sync your iPhone.

I would, uninstall the Music App and install iTunes though.
