How private and secure is the "Hide My Email" feature in iCloud+ actually?

I have read through Apple's support articles regarding this feature, but I'm wondering how private and secure is it actually? I'll use the feature to hide a Gmail email adress from the Mail app on my iPhone. Some questions below:
- I know this feature hides my real email address by showing the recipient a randomized @iCloud.com email adress as the sender. But what about my name, does it hide my real name as well? If yes: what name is displayed for the recipient?
- Does Apple ever provide my real identity if someone were to request it?
- Is it possible to reply from this randomly generated @iCloud.com email adress as well, or is it for sending a one-time email only, and by replying to any replies I receive I'll reveal my real email adress?
The reason why I'm asking these questions is because the company I work for doesn't have a whistleblower service, so there's no good way to report problems in the workplace secretly. I know privacy is at the heart of everything Apple does, and that's why I figured this might be a good way to deal with this - if I can feel secure that Apple will allow me to remain anonymous.
