Mail taking up too much space

The request to store email Off of the computer will really depend on your email account and with Whom it is placed with.

It will also depend on, if your email account Server uses POP Protocol which removes the emails from their Server and places the emails On your Computer

Versus an email account with a Server that uses the newer IMAP Protocol which will be store the emails on the email Servers

Yes, in this second case, a copy of the email will still be viewable in Apple Mail Application

So, once you delete the email in Mail, they will also disappear for the email servers
