My carrier is Spectrum. Ever since I’ve gone on this service, I have issues sending texts. I either cannot send if IMessage isn’t on, but when it’s on, it gives me issues like my message comes over as my email instead of text.

You might want to check your cellular settings if you want to send texts using cellular data (charges may apply).
(Messages app generally uses wifi to send imessages between Apple devices, and cellular to Android devices)
