High Efficiency vs Most Compatibility Video recording

Recently I noticed that the Video recording using the Most Compatibility will provide a higher bitrate than the high efficiency for the same scene and time which results that the .mp4 video file is much better quality than the .m4v, is this normal act, iPhone 15 base model, IOS 17.5.1

Why are the videos recorded with the iPhone 14 Pro Max softer and smoother than the videos recorded from my Sony Alpha 7S3 camera, especially when moving both for example from left to right or vice versa (something like quick panning). The RAM of the camera has a high speed (CF Express) and it is not a problem of the RAM. Both videos are reviewed on a common system (iMac 3.8 GHz 8-Core Intel Core i7 2020) But in Sony's 60 frame videos, a similar glitch occurs (both in H.264 and H.265).
