It seems when face ID is enabled when you press the power button to just turn the screen off. The phone locks. Even with it being set to wait 5 minutes. This is such an annoying feature that can’t seem to be disabled. When you go to Settings>face ID and passcode>require passcode>immediately is the only option

That is exactly how it is supposed to work. Pressing the power button locks the screen immediately. There is no such thing as having your screen off and your phone not locked.

A. Enable Face ID:
Did you disable Face ID? If so, you are required to enter the passcode immediately.
B. Remove Cards from Wallet:
Ant card in Wallet app? If so, you'd need a passcode immediately.
