Hey there, I have my system set keyboard to Australian spelling, but in pages the spellcheck is in US spelling. From everything I’ve read online I believe that it’s supposed to sync with the system set keyboard

You can set spelling separately in Pages (and various other apps) via Edit > Spelling and Grammar > Show Spelling and Grammar. Set the language to Australian English and not "automatic".
At the system level, you set spelling via system setings > keyboard > text input > edit > spelling. Again best use the language and not "automatic".
