I have a new Magic Keyboard. Even though I have added French Canada, it still will not type in French with accents unless I replace each word. I did go to Hardware keyboard to try and add French canadian, but it is not an option and none of the French choices correspond to French canadian.

Settings > general > keyboard > hardware keyboard. Tap on French or French (Canada). A long list of mappings should appear. Make sure you have Canadian French CSA checked.
