Did you do a Forced restart?
By GPS info, do you mean there is no map, or that the map doesn't include location text?
You could go to Settings>General>Transfer or Reset iPhone and choose Reset. A bit scary, but the next screen asks what to reset, and you can choose "Reset Location & Privacy." If most of your stuff is pretty much default, like mine, that might be fast and work for you.
I'd try that and see what happens...

Maybe the GPS chip is broken?

Is the iPhone time set correctly? Set the date, time, and time zone correctly on your device. In the Settings app, tap General, then tap Date & Time. If possible, turn on Set Automatically.
A diagnostics will tell you that. On the Apple support app you should be able to run the diagnostics if unable to just call Apple support and they can do it over the phone.
Have you moved these to a computer and used ExifTool to examine the data?
Did restart couple of times. Went to Location Services - Was on. Location Alerts set to Show Map in Location Alerts. Went to Screen Time, then Content & Privacy Restrictions - was on. Below that under Privacy- Location Services set to ALLOW & under that ALLOW CHANGES is checked. Went to Settings, MAPS and LOCATION was set to WHILE USING the app.
Am I missing something?
I volunteer & am one of the editors on the Historical Marker Database. When adding photos I have taken of a marker, the website uses the EXIF GPS coordinates to add the GPS coordinates to the marker page. I have been doing this for 11 years with iPhones 4S, 5S, 8 & 12. On the iPhone 12 have been doing this since I bought it years ago for thousands of markers. Just in June/July & those 200 photos (and continuing to now), the actual GPS coords are not there. I forgot to mention that I also done the Reset Location & Privacy to fix this & I just did it again and shutdown and restarted the iPhone. Still no GPS coords. Can't think of a setting that would have done this....
Does maps show your location? Apple, Google & Waze ALL show my current location. I used all three for navigation to the states where I took the photos and to/from my house in AL (some 3500 miles)

Yes, all photos are now on my MacBook Air M2 (2022). I have been using two separate EXIF apps to check for GPS coords. Have tested both with older photos and GPS does show up. Thanks for staying with this. Anything I can do to check for a defective GPS chip?

So no GPS EXIF metadata in new images, right? And the images were shot outdoors with good GPS signal from the satellites, right?

Not necessarily, Phones have other ways to determine your location.
As far as Jammers, I am pretty sure that GPS was jammed on some of the weapon ranges I visited, though I don't know how far off range that extended.
I finally decided to RESET ALL SETTINGS. A few tests with photos and GPS coords are back.
