It is still possible to delete items from your device after importing them to your Mac.

See: Transfer images in Image Capture on Mac - Apple Support

  1. Click Download (if you selected images) or Download All.
  2. By default, items you download remain on your device. If you prefer to remove them from your device, click the Action button  in the Image Capture toolbar, then either deselect “Keep originals” or select “Delete after import” (the option available depends on the type of device you connected).

If I were doing this, I'd use the Apple app Image Capture that's in the Applications folder. That app allows you to select the folder you want to "import to." I'd choose "Other" and create a new folder on the Desktop and import the pictures there. You can decide later if you want to add these to the Mac's Photos Library. You get the edited, cropped, annotated versions of the pictures, not necessarily the unmodified originals.

I haven't tried 3000 pictures at once. Check the results thoroughly before deleting any from your phone. Sometimes it works better to do smaller batches at once, but Image Capture is really a pretty robust program.

This all works whether or not you are using iCloud. Are you?
