With Pages v14.1 on a 2023 M2 Mac Mini Pro running Sonoma 14.6.1 and using an Apple Extended Keyboard where one wishes to perform a forward delete from the insertion point:

  • fn+⌦ removes a single character
  • option+fn+⌦ removes all characters to the next white space (e.g. word)

Apple states in the Pages keyboard shortcut documentation that the fn+⌦ is not available on all keyboards.

A case in point with a U.S. keyboard and 2021 MacBook Pro M1 Pro running Ventura 13.6.9, there is only the following to forward delete a single character:

  • 🌐 + Delete

Otherwise, and again, on a U.S. Keyboard, the backspace key does one deletion on a preceding character and an option+Delete removes the preceding word. This behavior is on the extended keyboard and the MacBook Pro keyboard.
