What happens when you try? There are so many possibilities that just listing off random things that might work is incredibly inefficient.

Are you using the Apple Mail application? Or something else? Are you getting any error messages? If so, what do they say? Be as exact as possible. Screenshots help.

You might also try this troubleshooting wizard from Google:

Signing in with an Apple Device

start by checking your internet connection and ensuring your browser is up-to-date. 

Clear your browser's cache and cookies. If the issue persists, try logging in using incognito mode or a different browser, and check if there are any Google service outages.
