I had to reset my AirTag and it went as it should and it showed up on my phone in Find Me and gave me notification when I was working in the yard that I had left it in the house. So it seemed to be working. That day I used it in a package I mailed and now it is not showing up anywhere. Why did it disappear and how do I get it back? And just why is this so hard???

The Apple AirTag relies on Bluetooth and the Apple crowdsourcing "Find My network" to provide you with location updates to your iPhone.
That means, once your tag is outside of the Bluetooth range of your iPhone, which is around 30-40', it needs to be within that range of another iPhone. In turn, that iPhone having an active Internet connection, would relay the tag's ID and the phone's GPS location to the Apple servers over that connection. This is where it would eventually show up in the Find My app on your iPhone.
It may be possible that the tag's Bluetooth signal cannot transmit outside of the package you placed it in, and thus no nearby iPhones would be able to pick up that signal.
