I bought a new ipad for a friend in the hospital and am setting it up. I don't want this one to have any access to my other devices - no calendar, cloud, etc.

You should set-up the iPad with a completely different AppleID. Using your own AppleID to perform the setup will invariably lead to your personal/sensitive information being accessible.
Ideally, allow the recipient to set-up the iPad using their own email address/AppleID. If they don't already have an AppleID, they can create the account during the initial iPad setup - using an email address to which they have access.

To make sure the new ipad doesn't have any access to your other devices, just create a new Apple ID and save the login information on your phone or anything that you use to hold/store your accounts and passwords. Then you can also link the new ipad and your friends Apple ID to your Apple ID as a family member.
