Shutting off auto text

I used to be able to push a little microphone on my screen and I could talk and text - that little icon is gone now and now it automatically starts typing anything I say while trying to text - no microphone to push - I looked in settings to try to turn it off but could not find anything to help me

Lost Voice Message-Text: Microphone Works/Siri, Voice Memos Work When sending a text I use to be able to hold the microphone button down and record a voice message. That’s all gone, I have microphone icon in the message box. But can’t hold it, and does voice to text when I push, that’s it. I’ve a lot of the online fixes w/out success. Additionally there use to be a bar with options, like photos, emojis, and other random options. That’s gone too. Am I missing something?

Talk to text problems!!! Is anyone else having problems with their Apple dictation/talk to text? I depend on it heavily with my job and I can’t get it to even type out a simple sentence without several errors. Even trying to do this message it would only do a few words and doesn’t pick up on half of it!
