Yes, pre-orders can be canceled. Place two pre-orders, one for each color, and cancel the one you don’t want on Saturday or Sunday. If you wait any longer, it may still get shipped and you’ll have to do a return of one of the devices.

Cancel an online order 

To cancel an online order before it ships, you can: 

1. Go to your Order Listing page 
2. Select an item to see your order details 
3. Select Cancel Item 

“Pre pre-order” actually means you have prepared a device for pre-order, which will allow you to speed up the process once pre-ordering begins.

Apple will shut down the online Apple Store several hours before pre-ordering begins. Until that time, you may remove any device you have prepared for pre-order and replace it with another. Or you may have several devices prepared for pre-order. None will be ordered until the Apple Store opens, starts accepting pre-orders, and you submit the appropriate prepared device(s) for pre-order.

If you do place a pre-order after the Apple Store reopens in about 13 hours, bear in mind once your order reaches the ‘Preparing for Shipment” stage, your payment method will be charged.

The iPhone will ship in the color that you chose before you clicked preorder.

You can of course call the Apple Store and ask. There may be nothing they can do for you, but it won't hurt to call and find out.
