Logged out of one child’s AppleID & Can’t login with any new AppleID

My daughter has an iPhone now, so we’re giving our son her iPad. I turned off screen time restrictions for daughter and signed out of her account in the iPad. I started to login with my son’s AppleID, password, and Passcode, but it didn’t work. The “Sign in to your IPad” in settings is grayed out, and it appears as if no one is logged in to this iPad right now, yet my daughters photos, apps, and other display settings are still on the device. When I go to iMessage it prompts me to sign in, yet it is also grayed out and it doesn’t give me the ability to even type an email. HELP! Please!!

I have read through that article and those steps multiple times. This is where the hang-up is…

  1. Sign out of iCloud and the iTunes & App Store.
    • If you're using iOS 10.3 or later, tap Settings > [your name]. Scroll down and tap Sign Out. Enter your Apple ID password and tap Turn Off.
    • If you're using iOS 10.2 or earlier, tap Settings > iCloud > Sign Out. Tap Sign Out again, then tap Delete from My [device] and enter your Apple ID password. Then go to Settings > iTunes & App Store > Apple ID > Sign Out.

I have signed out of my daughter’s Apple ID… now, the “Sign in to iCloud” button is grayed out. I can’t sign anyone into this thing.

I guess I just don’t understand how Apple can be so ‘advanced’ with parental controls and technology, etc. but they can’t manage to keep sets of data with specific users.

I don’t want to merge the data. I could care less if my son has her apps or contacts… I don’t understand why a simple login and logout is so difficult, or apparently impossible?
