Is there a way to change the iPhone calendar dots to different colours? Right now it is in grey.

In iOS 17, there are no settings to change the color of the dots in the Month view. For iOS 18, Apple mentions that the month view has been redesigned:
I can't post any information here for the moment as iOS 18 is not officially released but a quick search on the internet will show what the month view looks like in iOS 18.
iOS 18 will be published next week and is compatible with your iPhone 11.
