Can't figure out how to change old info for Apple Pay verification

I'm trying to add a card to my Apple Pay. When I get to the verification stage, my choices are a phone number that is my old school land line (which obviously can't receive texts), my old work phone number (where I no longer work), an email address that never receives the verification code (Yahoo), and the phone number to the bank.

I don't even know why it's showing me these choices. AFAIK, my primary phone number with Apple is my mobile and I've never associated my Apple account with my former workplace. The email address is the address I do have associated with the card, so I'm guessing it's pulling that info from the card issuer. However, I just changed that email address in the bank app, so I thought the verification method would change with it. Nope.

I do have a call in with the card services, and they were able to complete part of the process, but I have to wait until Monday to call the credit union to get the rest done.

In the meantime, how do I get all this old information changed? In Settings > Wallet & Apple Pay, the Transaction Defaults settings are all correct (meaning, not listing all this old information). In Settings > Apple ID > Sign-In & Security, the phone number and email are correct. I'm on iOS 17.5.1 on an iPhone 13.

Apple is not a bank. Apple has no way to verify your identity. Your bank is doing the authentication and they are using the information in the records for you.

>>Adding additional verification

A card issuer can decide whether a credit or debit card requires additional verification. Depending on what’s offered by the card issuer, the user may be able to choose between different options for additional verification, such as a text message, email, customer service call or a method in an approved third-party app to complete the verification. For text messages or email, the user selects from contact information the issuer has on file.

A code is sent, which must be entered into Apple Wallet, Settings or the Apple Watch

app. For customer service or verification using an app, the issuer performs their own communication process.<<
