Is it possible to play Dolby Atmos sound, or other multi-channel sound, from Apple TV 4K through Airplay to third party speakers with airplay support? If so, which ones? All or just some?

No, not through AirPlay.
AirPlay will be stereo (or mono) to third party devices.
Dolby Atmos requires a wired HDMI connection.
The only exception is HomePod speakers (the large ones, not the Minis). Still two-speaker audio, but processed from the Atmos stream, when available.

True, but that is different, not AirPlay to the audio system, but wired from TV to the audio system.
