I’m looking to buy the new Apple Watch 10
if I buy in USA will it work in UK or if not if I buy in UK airport will in be cheaper than on the high street?

Since watchOS and iOS are country specific, not all features might be supported. In case of an Apple Watch 9, 10 or Ultra, the O2 sensor will not work for models sold in the USA, for example.
