When I resend a mail in Apple mail; will the already send item be removed at the receiver

When I want to add something in a mail that I have send, there is an option in to resend the mail in Apple mail; Does the person I send the mail to see 2 mails or only the last one in his mailbox

Email draft disappears when tapping To: field I used to be able to send myself an email I wrote, then use the writing tools to make it a professional version and then share that back to my outlook email. Now when I do this, once I tap in the "To:" area of the new message, the entire re-written email and message box goes away. Why?

"Sent" messages view options in Mac Mail. I'm probably missing something obvious, but... I'd like Sent messages in MacOS to appear as they do in iOS - where the recipient's name takes priority over mine, per the screenshots. Cannot see a way to do it 🥲 Thanks.
