Got the new Apple Watch S10 last night and the new iPhone 16 pro. Went to turn on the sleep apnea detection and didn’t see the option for it. Rebooted both the phone and watch and still no luck.

I'm happy to report that I had this exact issue and fixed it. I upgraded from a Watch 6 to a Watch 10 today. I paired the 10 and then had this issue. I decided to try un-pairing both watches and then re-pairing the 10. This fixed it.

This issue has been reported in more than one country by a number of users and there appears to be no fix at this time. It's been said, though not verified, that Apple Support has escalated the issue, so this may be in the process of being looked at. Whether that is indeed the case and if so when a solution will arrive is something none of us here can say. You can contact Apple Support, report the problem, and see if they have any further information.

This feature is working on my Apple Watch Ultra 2, paired to my iPhone 12mini.
So I guess this might be related your new Apple Watch 10 series. Did you already update to watchOS 11.0.1, which just has been released today?
For some users unpairing and pairing the watch again, setting it up as a new device, and not using the latest watch backup, did work.
From what I’ve seen, you have to go to the Health Checklist, and there will be an option to set it up.

Have you made sure that both the watch and the iPhone are completely up to date?
You can find the sleep apnea function in your health checklist normally. I have a series 9 that is also compatible with sleep apnea tracking and I enabled it via there
Ive got the same issue. 15 Pro and S10. No sign of this feature. im in the UK.

Yep, only that option is not there.
Says not available on my new 10 paired with a 15 pro max. Pretty annoying! It was one of the features I upgraded for.
They are up to date. I live in Las Vegas, Nevada and a week ago my old phone and watch (iPhone 15 pro and Apple Watch s9.) had the sleep apnea option available.

It’s not available in all regions so it’ll depend where you are.

I tried this, but no luck :(
I went from an SE version 2 to a series 10 and am not able to flip it on. I even unpaired it again and rebooted essentially from scratch and still not available.
